Instructions

  1. Dough

Put the flour in a bowl. Dissolve the yeast in the lukewarm water and pour it over the flour. Add the sugar and olive oil and season with salt and nutmeg.

  2. Knead with a stand mixer or dough hooks and finish by hand. The dough should be soft and not too sticky; carefully add a little flour or water if needed.

  3. Dust the dough with a little flour, cover with a tea towel or cling film and leave in a warm place for 1-2 hours. It also works in the oven at 20 °C with a wooden spoon wedged in the door.

  4. When the dough has grown, knead it again and divide it into equal portions. Dust with a little flour, cover with a tea towel and leave to rise for another half hour.

  5. Roll out each portion on a floured surface and top it as Flammkuchen or pizza.

  6. Flammkuchen

Spread the Schmand or crème fraîche over the dough and season with garlic. Top with strips of bacon and red onion, and grated cheese if you like (not original Alsatian).

  7. Heat the oven to 225 °C and bake the Flammkuchen on a tray lined with baking paper for about 15-20 minutes. Just keep an eye on it.

  8. Pizza

Pep up the Tomato al Gusto or chopped tomatoes with garlic and oregano and spread it, not too thickly, over the rolled-out dough on the baking tray. Top with salami, ham, tuna, mozzarella or grated cheese as you like.

  9. Heat the oven as high as it goes and bake for about 15-20 minutes.
